Hope*less Chicken Nachos

Very rarely, I’ll stray from the slow cooker for a meal that’s truly worth it and let me tell you, my chicken nachos surely are.

What’s better than an equally EASY recipe that your entire family will LOVE?  Even the leftovers are amazing the next day.  My husband and I can both attest to that!

Prep Time: 15 minutes

Bake Time: 15 minutes

TOTAL: 30 minutes

 

WHAT YOU’LL NEED

1 lb ground chicken

1 can petite diced tomatos

1 can reduced sodium black beans

1 small white onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp taco seasoning OR Tastefully Simple Fiesta Party Seasoning

2 cups shredded Mexican cheese

1 cup Taco Bell queso

1 jalapeño, sliced

Salt and pepper to taste

 

On medium heat, brown ground chicken in skillet.  Season with salt, pepper, and taco/fiesta party seasoning.  Once brown, add peppers and onions and let simmer for a few minutes.

Strain both the tomatoes and the black beans.  Combine tomatoes, black beans, and chicken/onion/pepper mixture in medium-sized bowl.

Arrange one layer of Tostitos Scoops tortilla chips into deep dish baking pan.  Spread one layer of chicken mixture atop layer of chips.  Scoop heaping spoonfuls of Taco Bell queso evenly atop chicken mixture.  Top with shredded Mexican cheese.

Create a second layer of chips atop this and repeat.  Top final product with sliced jalapenos.

Bake at 350* for 15 minutes.

Voila!
